Day 22--Really? That went fast!

I can't believe it's been 22 days of being wheat free already!  Kev and I even survived a trip to Atlanta with no wheat!  I was looking forward to trying a gluten free hot dog at Turner Field (who doesn't love a good ballpark dog?) but I couldn't even begin to make myself get one as I was STUFFED from the veggie taco I had for dinner.  Make that 1/2 of a veggie taco.  I couldn't believe how full I was!  We also did have some tortilla chips and queso before our main course but still!  That is something I have to get used to.  I'm used to eating an entire platter-ful of food and rolling out the door.  We did a lot of walking on that trip too.  We were just down the street from food and coffee and enjoyed the crisp, cool air and the exercise.  I told him this might just be the first trip we've ever taken where we actually lose weight!  I think that being wheat-free actually made our trip more enjoyable because I always want to try local restaurants but Kev just isn't that adventurous.  Most of the local places were the ones that had gluten free items.  We had the BEST pizza at Blue Moon Pizza in Buckhead.  I would LOVE their recipe for crust.  You would have never known it didn't contain wheat.  It was crispy and perfect.  I wish we had one here in Knoxville!  


I guess I haven't been updating the blog much because I felt like I would just be saying the same thing over and over again.  I still have energy throughout the day and I'm not snackign all the time.  I did have a day, recently, when I did feel like snacking so I don't know what that was about but for the most part, I'm doing well on it.  I just wish I would see a difference in my clothes or on the scale.  I'm not really discouraged by that though because I feel so great.  It's worth it for that reason alone.  


I spread out 4 bales of straw (wheat straw) yesterday to cover grass seed for our dirt patch...oops, I mean backyard!  I started sneezing a bit while spreading it and today I have been absolutely miserable.  I take Allegra every night and haven't had any flare ups this entire summer until dealing with the wheat straw.  Coincidence?  I think not.  Just an interesting observation.

Weight Loss Realized

I'm not quite ready to talk openly about my weight -- not as a number at least.  Once I'm buff and 160, I'll share numbers -- but let's call it the heaviest I've ever been.  However, in the past I've noticed that no matter how hard I try -- working out casually or eating better... makes literally no difference in weight.  For the past year, I've been almost exactly where I am today.  I fluxuate + or - 5lbs, depending on the time of day.  So let's call it my "morning weight" vs "night weight".

When we started the wheat-free experiment, I was extremely apprehensive.  While I wanted to believe the claims in the book, I am naturally skeptical about miracle cures.  I'd rather be pleasantly surprised that it worked -- as opposed to being disappointed in the experiment (and myself) when it failed.

Office Space and Buckeye Balls

Anyone who has seen Office Space instantly relates to the dialogue including "Corporate Accounts Nina Speaking, Just a moment" (and repeat)...  Being in a cubical farm is survivable, even with repetitively monotonous phrases.  This challenge for me, however, is to listen to the conversations at the bake sale.

The office set up a charity bake sale that's been going on since 9:30am or so.  53 feet from my desk, patrons approach to discuss how delicious the triple-fudge cupcakes were, or "how much is this cheesecake?!"  I can not only picture the food -- I can taste it in my brain.

Day 3

Well, today has been a good day.  I don't feel the need to eat constantly.  I am getting filled up on smaller meals and my nighttime snacking has stopped (wahoo!).  I also didn't have time for my morning coffee today (trying to wrangle everyone out the door for church services) and I didn't even notice it!  I am normally doing all I can to keep my eyes open when that happens but I felt like I had had coffee today.  Amazing!!

Having a 2 year old and a 4 year old in the house means that peanut butter sandwiches are quite the staple here.  I used Pamela's Gluten-Free Bread Mix & Flour Blend.  It was incredibly easy to make!

Day 2 Happenings

Okay, so there wasn't a lot of stressing about food today.  I'm finding that I'm not sitting around thinking about what I could be snacking on, which is highly unusual for me.  I can be sitting around, totally engrossed in something and then just BAM! think that I want something to eat but not today!  The other thing I have been noticing is some memory problems so I don't know if this is because of the wheat still affecting my system.  There are certain details that I should know without much effort that I am having to sit for a good 15 minutes (or more) to come up with.  Oh but the big thing I am noticing is how I haven't had the 2pm siesta time.  I am normally fighting to stay awake at that time of day, every day but not for the past few days.  Oh, did I also mention that I'm not buying any more Diet Dr Pepper too?  I figured I'd work on keeping my teeth enamel intact as well.

Kev's Lunch Today: Headless BK

In geek speak, "headless" refers to a command-line-only server OS.  For instance, if I installed Red Hat without the Gnome or KDE components -- it might be referred to as "headless", running in init level / runlevel 3.  I'm a big fan of the term "headless" and I have used it for years when referring to the basics of a certain product - such as a burger without the fluffy bun.  Today is no exception.

So since I work walking distance from Burger King, I expended the energy to "exercise" across the parking lot to get a Double Stack.  Large fries too.  I removed the bun and salvaged what I could of the cheese... but I ate the entire burger, bacon, sauce, and most of the fries.  If this 30 day experiment is going to show any changes, I'm not going to trick it into false results.  I'm going for the gusto.


Tonight's Dinner

So I had already been planning to make a quick Tuna Noodle Casserole for dinner before we started this book.  I drove by Earth Fare (let me say how happy I am to live in an area where I have a healthy market near us!) and found some spiral noodles made from corn and rice flour.  The casserole came out great!!  I also now have blackberry cobbler in the oven with the flour mix that I paid an arm and a leg for!!  I just did it P-Dub style and substituted the wheatless flour mix for the wheat flour she calls for.  So, all in all, not such a bad day.  I do have a bit of a headache but I did notice I didn't have the 2pm slump that I always have.

Day 1: Wheat Free...this is gonna be a long day

Hey there!  This blog is going to be a journal, documenting my (and my hubby's) journey to cut out wheat for 30 days.  We just got the book "Wheat Belly" by Dr. William Davis yesterday (Wheat Belly Blog) and we are already intrigued enough to cut out wheat.  This is going to be tough.  You don't understand, we are HARD CORE carb lovers.  When I start thinking of all the things I won't be able to have, I start to feel like I just won't be able to do it but, reading the book helps remind me why I need to do it.  


I realize anyone reading this blog may have no clue what I'm talking about with this book.  It is brand new and I had never heard this stuff either.  My husband asked me what I thought about it when I started reading it.  I had no words.  I literally sounded like Porky Pig, stuttering around, trying to get the words out.  Dr. Davis brings up the thought of why is it people in the 1950s ate wheat and didn't do formal exercise but still stayed thin?  Could you picture June Cleaver putting on her jogging suit and sneakers and telling Wally and the Beav that she was going to run 2 miles?  Of course not!  So, why is it so different now?  We cut out the "bad foods" and sweets and still can't lose weight.  We even work out regularly and still can't lose the weight.  We go by the FDA recommendations of eating "more whole grains" and can't lose the weight.  Well, Dr. Davis suggests the reason for this is how the wheat of today doesn't even resemble the wheat of 50 years ago.  Here in America we think of the iconic "Amber Waves of Grain" when they are more like barely hip high, small stalks called "Semi-Dwarf Wheat."  I became so angry, knowing that our government has funded all of these changes in our foods to where we can't even get normal things like wheat anymore and we didn't even know about it!  I want to know what is going into my body and my family's!  


I also kept hearing Dr Davis say "it's not your fault" about trying to be healthy and still not being able to lose the belly fat.  I thought I was doing the right things but it just wasn't working!  


Anyway, I doubt that my daily posts will end up being this long (I heard that sigh of relief) but felt the need to give a background on this subject.  


Okay, so far I've had breakfast which reminded me of my South Beach phase 1 days--eggs and bacon.  It's soooo hard not grabbing my beloved Ezekiel Bread to go with those eggs.  I am a creature of habit when it comes to breakfast and I rarely have anything else besides eggs, Ezekiel Bread toast, and coffee.  So far, I feel full and I'm going to do things to keep myself busy so I'm not thinking of bread....I'm such an addict!!

Kevin's Motivation

Late yesterday afternoon, I was looking for a new Kindle book.  I have never been a reader, but with the Kindle -- I find myself actually enjoying it!!  So I did a search on Amazon for "self help" books.  Previous books I've enjoyed revolved around entrepreneurial motivation, team-building, Christian motivation, or financial management.  I'll save Twilight and other dreamy novels for the big screen.

So I saw the "Wheat Belly" book as a suggestion and barely gave it enough time to look at the synopsis.  I've got friends with nutty diets (literally and metaphorically) and I just never saw myself as "that guy".  Give me a burger on a giant bun.  That's the American way.

Within a few pages of this book, a few things started to "click".  I'm being very cautious not to get sucked in just because "I WANT TO BELIEVE" what it tells me.  The little amount of this book I've read tells me that certain triathletes (30+ %) are overweight... HOW!?  It's easy for me to relate to this book -- I don't eat a lot of sweets, nor do I load up on rich saucy pastas... so why am I always right about the same weight no matter if I eat small amounts or large... work out or not?  And yes, I've tested "eat less" and "exercise more" for long enough runs that I *should* have seen results better than what I did.

So this seems to click... and if this book is correct, this is the key.  I have committed that I WILL NOT make changes aside from wheat (and possibly soy).  I will continue to eat burgers (without the bun) -- and possibly two bunless burgers to fill me up as much as one bun-ful burger.  I will continue to drink mochas and eat candy / donuts as they appear in front of me.  I WILL NOT become that guy in the office who is 50 lbs overweight and still rejects a free donut:  "I'm losing weight".  No you're not -- you're depriving yourself of a Krispy Kreme in hopes that the one single act of neglecting sugar will fix your fat.  I won't be that guy.

SO this my or may not seem logical to you.  I honestly am not planning to sway the odds.  This is about wheat and I want to see what this one change can do -- which means Krispy Kreme and Starbuck's stay -- Wheaties go.

I begged my wife to read the book -- she got sucked in too.  And my plan is to go 30 days, then reevaluate the plan.  But 30 days should show SOMETHING... and if it doesn't, I'm exactly where I am now.
